Smoky Peanut Chicken Tacos

Spicy chicken tacos with peanut sauce.



Puree peanut butter, water, butter, garlic, chipotle, adobo sauce, and salt until smooth. Pour into a two quart baking dish. Add chicken, turning to coat.


Cover with foil, then bake 205°C/400°F for 30 minutes, or until chicken is cooked.


Slice chicken, then drizzle with lime juice. Serve with tortillas, cilantro, and red cabbage.
